Short Ribs come from the area between the chuck and the ribs and are a portion of the rib bone and the surrounding meat.  They are also known as Spare Ribs.   Short Ribs combine the rich marbling of the rib area and the deep flavor of the chuck.  They are perfect for slow cooking and braising.
